Corn salad

Corn salad is a member of the valerian family. The name corn salad derives probably from the fact that this vegetable often grows in wheat fields as a weed and that you can use it in salads. This very healthy leafy green vegetable has a nut-like flavour. You can cook and stew corn salad or use it raw in salads. It's often added to mashed potato stews, soups and pasta salads. Don't cook this vegetable too long to preserve important vitamins. Corn salad is delicious in combination with e.g.: bacon, varieties of lettuce, tomatoes, nuts, peaches, meat, chicken, fish and pasta dishes. Use finely chopped fresh corn salad as garnish.
