Mustard is relatively unknown in the Netherlands. That is a shame, because it is a very healthy and versatile vegetable. It can witstand cold and can be grown in the colder months of the year. You can harvest this vegetable quickly. You can use it raw. But it can also be cooked, stewed and steamed. Use the young and spicy leaves in salads and on sandwiches with cheese, egg or ham. Use the older leaves finely sliced in soups, stews, casseroles and in stir-fries. You can also use this versatile vegetable as sprouting greens. The flowers add a very spicy flavour to salads. You can also use the seeds of the plant to make mustard. This plant can also be used to enhance the soil or as a green manure.
